When coffee is ground, it’s surface area is increased, allowing for better extraction. But once the beans are ground, they start to degass, releasing their characteristic flavors and aromas. The larger surface area also makes the grounds more susceptible to degradation from moisture in the air, meaning it will go stale more quickly. (1):
